Roni Cheese: Take II

I like to cook....gosh, I can almost hear Jon laughing as I type that. Usually, it's every man for himself around here at mealtime. When I was single, I cooked quite often and enjoyed it a lot. I stopped cooking very much when I met Jon, because he was such a health nut....and my meals were anything but healthy. I didn't think it was much fun to cook if you couldn't use gobs of cheese, butter, oil, etc. Also, it was difficult to cook for him because I worked from 3pm to 11pm back then.

Lately, I've been trying to cook more. I especially want to get more vegetables into my and Savy's diets...neither one of us like our veggies very much. That's why I bought the "Deceptively Delicious" cookbook. My first attempt last week was macaroni and cheese with cauliflower. I thought Savy would be more likely to try this since she loves mac-n-cheese. Jon loved it....he likes cauliflower anyway. I thought it was ok. Savy wouldn't even taste it.

So tonight I tried macaroni and cheese with butternut squash.





This one almost fooled her. She said "nummy, nummy, roni cheese" when I sat it down in front of her, got a forkful, and licked it....then she didn't touch it again. She did eat her veggie nuggets though. I thought this was really good...it tastes just like regular mac-n-cheese. Jon liked it too.

There are many more recipes in that book I want to try. I think I'll experiment with some of the dessert dishes next...maybe Savy will actually take a bite of those.

And just for Jon, maybe I'll make my special bread pudding with bananas foster sauce...that's his favorite dessert. I learned how to make it at the "Cooking Cajun, Cajun Cooking School" in New Orleans, but I put my own twist on it. And it is divine, if I do say so myself. If anyone wants the recipe, I'll be happy to share it.

I want the recipe. I hope Savy will start eating more vegetables. They said on TV that it is very important to put the veggies on their plate whether they eat them or not. They said sooner or later they will pick up the fork and eat them too. Little ones tastes changes pretty often.

I am so impressed that you are experimenting with veggies, good for you. Maybe this post will motivate others.
