Resource Guide

A friend asked for info on my food lifestyle, so I thought a blog post with all my favorite resources would be the easiest way to go. I was not asked to review or compensated for reviewing any of the products mentioned in this post.

For those of you who don't regularly read the blog, it all started with my being diagnosed with Multiple Sclerosis in November 2010 after I experienced severe hearing loss. That news was quite a shock, but now I know it was a blessing in disguise because it gave me the kick in the a$$ I needed to seriously look at our family's health. My previous diet was awful. Yes, I considered myself "healthy" and stuck to a low fat diet. Unfortunately, it was a diet composed mainly of convenience foods and processed foods...not real whole foods. I NEVER ate leafy green vegetables, especially not raw ones. I thought I was doing good if I ate a few pieces of cooked broccoli once a month. I drank diet soda like it was water. I did exercise regularly and maintained a healthy weight, so I thought all was well.

So there I was with a new MS diagnosis thinking medication was my only option until my dear friend, Jennifer, told me about the Gerson therapy. That's where I began my research. The documentary The Gerson Miracle is a great starting place and is available on Netflix. Some of the other movies I found very helpful early on were The Beautiful Truth, Sweet Misery: A Poisoned World, Food Matters, and Food, Inc. Food, Inc. is the reason I don't eat fast food burgers EVER anymore. These movies are "the eye-openers." Watch these with an open mind...it makes perfect sense. I just recently watched Fat, Sick, and Nearly Dead - a bit extreme, but it's amazing proof of the power of juicing.

As for reading material, Crazy, Sexy, Diet by Kris Carr is an awesome book full of good information. One of my favorite blogs is The Wellness Warrior. Jess actually went to the Gerson Clinic for treatment, and she shares TONS of good info on her blog. You should start by reading her story, then read every single post from the archives!

I tried lots of different ways of eating and combined the best of all of them to find what is right for me. I eat meat/dairy in moderation - it does have to be free of hormones, preservatives, etc. That meant giving up lunch meat. The Primal diet is another one I find interesting - I like the low GI aspect of it. Marks Daily Apple is a "primal living" blog I really like. There are great grain-free recipes on there. Cutting out rice, bread, pasta (yes, even whole wheat) has made a HUGE difference for me.

It was pretty difficult at first. I knew the things I shouldn't eat, but I didn't really know how to prepare the things I should be eating. I'd go grocery shopping and leave pretty much empty-handed. I bought a juicer and started making juice every day. My base is apple, pear, and carrot. Then I'll throw in leavy greens, cucumber, beet, grapes. There are many, many juicing recipe books, and I'm sure they're all great. The one I bought was Total Juicing (co-written by Elaine Lalanne, wife of the late Jack Lalanne), and I found it very helpful. My juicer is a Breville - not that exact one, but it's similar. It makes great juice, and it's held up fine through daily juicing since November. It's a pain to clean and you have to clean it after each use, but any juicer is going to have that same problem.

In order to get lots of raw leafy green veggies into my diet, I tried green smoothies. I had a decent blender, so I threw in some collards and berries - BLECH! No matter how great your blender is, it is NOT going to make a smooth drink out of leafy greens. I went back and forth on getting a Vitamix. They are expensive, but I was reading that they make excellent smoothies....even from leafy green veggies. Since my juicer isn't really efficient at juicing leafy greens - and there was no way I was going to eat 'em raw - I did break down and buy a Vitamix. Best purchase I've ever made! This is the one I got, and I love it! It makes completely smooth drinks no matter what you put in there. It comes with a "cookbook" which has recipes for all kinds of things in addition to smoothies. This was definitely worth the cost. If you calculate the "price per use," I think Vitamix actually owes ME money now - haha. I have at least one or two green smoothies every day. If you want recipes, all you have to do is "Google" green smoothie recipes - there are tons.

So, what do I eat? I rarely eat out anymore. When I do eat out, it's usually for a special occasion (like date night), and I do allow myself a little splurge now and then. Larabars are great for a snack- the ingredients list is usually only 3 or 4 ingredients. I stick them in my purse for whenever anyone is starving when we're out running errands...that way I'm not forced to stop for fast food. One of my favorite (and easy) meals is onions, green peppers, and chicken sauteed in olive oil, seasoned with sea salt and black pepper, garnished with a spoonful of Greek yogurt, and served on a bed of wilted spinach. There are a few ideas on the blog if you click on the "food" category to the right. I'll try to start posting more about the meals I fix at home. Almost any dish can be made "cleanly"...you just have to watch the ingredients lists. Don't be fooled by "natural" or "organic" on a product. I've found plenty of "natural" products that are made up of all kinds of UN-natural ingredients. And an organic cookie is still a cookie.

So this is all to get you started - the documentaries are all available on Netflix. I think most of them are available on instant streaming except for Sweet Misery - had to get that one on disc. Definitely read Crazy, Sexy, Diet. In a nutshell, eat whole foods without additives, preservatives or any other crap. Read ingredients lists....if it has anything that sounds like a chemical, don't eat it. Drink water or (if you must have flavor) tea...no sodas, energy drinks, bottled juices etc. If it sounds or looks like something you'd make in science lab, don't drink it. Absolutely NO artificial sweeteners, ESPECIALLY ASPARTAME!!! Stevia or raw honey are the only sweeteners I use. No MSG (monosodium glutamate) - and it is REALLY hard to avoid this one because it's in almost everything that's processed in any way. Limit animal protein. Eat vegetables, especially leafy green ones - organic if possible, raw as much as possible - and LOTS of them.

I'm by no means an expert, but I have done A LOT of research on the subject. The best way to get started is to watch those documentaries and read the book. If you have any questions, just ask..."real" food and clean eating is my favorites subject.

Hey, Savy, You're So Fine....

I can't see Savannah in her little cheerleader uniform without getting the song "Hey, Mickey" stuck in my head.

I'm staying up late tonight to post this because I know there's a very anxious Mimi and Papi just dying to see Savy at the game Friday night. I started out just taking pics (because I was holding a squirming Scarlett), then I missed the very beginning of the dance (because I'm slow)....but you get to see most of it.

Here's Savy before we left for school Friday morning. The "Little Vikings" were cheering at the pep rally that afternoon, so all the girls wore their uniforms to school.



I asked her to give me a cheerleader pose. Her idea of a cheerleader pose is very similar to a flamingo...just standing on one foot. How I love that girl!




She asked me to put the red bow (one of the ones Granny Ruth gave her) in her hair.



Jon, Scarlett and I attended the pep rally Friday afternoon. That was WEIRD - I haven't been to a pep rally since 1992! Here are a couple of pep rally pics. In the first one, look for the blur right in front - that's Savannah.

Here's the dance video...sorry for the late start. Since I didn't know the dance to practice with her, she only had last Saturday to learn it. Even if I had practiced it with her, I doubt she would have done it that way. If you know Savannah, then you know she dances to her own beat! I think she did great, and she was so proud. Her BFF, Maeson, is right beside her with the red and black pom-poms. I was quite impressed with Maeson's performance - she had it DOWN!

MS Treatment Journal Entry And Some Random Stuff

It's been awhile, so I guess it's time for another treatment journal entry. Those of you who follow my facebook posts may have noticed I started over on C25K. I'd made it to week 7 before, and I was doing the 23 minute run (no stops) with no problem. We did the MS walk back in April....did the nearly 5 mile walk, in fact. I guess I was a little too confident, and I actually wore (then 20 lb) Scarlett on my back in the baby carrier so Savannah could ride in the stroller. I made it through the walk no problem, but apparently that extra 20 lbs on a 5 mile walk on a hot day caused a relapse of severe fatigue. When I tried to do the 3rd 23 minute run on C25K, I simply couldn't finish it....weird since I had done the same run twice before and it was easy peasy. I tried again a few days later and did even worse. Then I tried it one more time and failed miserably. If I remember correctly, I'd been doing about 6 or 7 laps without stopping before the MS walk - on my third attempt, I could only finish 1 lap. So I finally admitted it wasn't just all in my head and took a break from running. Now I'm starting over again. I just have to remember that (no matter how great I might feel) I can't push myself too far. I'm not exactly happy about that, but it's better than having a relapse again.

I'm still taking the copaxone injections every day. Sometimes the sites still swell up pretty bad, and sometimes they don't swell much at all. The sites on my thighs are always the worst...I dread giving the shots there. I guess the best is probably the arm sites - Jon usually gives those because I can't reach it myself. Ice packs don't seem to make much difference.

I'm still juicing and drinking green smoothies every day - that part is going great. My Vitamix is one of the best purchases I've ever made! I'm not really as fond of the juicer, but only because it's a pain to clean. I only make juice once a day, and Scarlett gets upset if I'm late getting to it - she LOVES her juice! Savannah still doesn't like the juice too much, but at least it's a little easier to get her to drink it now. Jon finally agreed to start drinking green smoothies too if I make him one for breakfast every day. I've had the documentary "Fat, Sick, and Nearly Dead" on my Netflix queue for weeks, and we finally watched it last night. It's definitely worth watching...amazing proof of what juicing can do.

Here's a list of the supplements I've been experimenting with: astaxanthin, krill oil, spirunlina, chlorella, vitamin D3 (I also try to get some natural sunlight every day), chia seed, and maca powder. In my opinion, the astaxanthin is DEFINITELY worth taking, and I'll certainly continue it. The chia seed is another thing I'll stick with - I've definitely noticed good results with both of those things. And of course, I'll continue taking the vitamin D until we see what my level is in October. The maca powder doesn't really seem to do much, and it tastes terrible, so I'm dropping that one. Not sure if the krill oil is really doing anything for me either - I may not continue it once my supply has run out. I'm not sure about the spirulina and chlorella yet...haven't been taking them too long, so we'll see....

Diet is pretty much the same....organic as much as possible, no additives or preservatives, no sugars (except from the fruit I eat), no bread and very limited grains, and NO ARTIFICIAL SWEETENERS. I know I said before that I was planning to go vegan, but I've found that I feel like crap if I don't eat some animal protein now and then. When I do have meat, eggs, or dairy, I try to get hormone and antibiotic free.

Ok, on to other topics. I've become addicted to Pinterest...as if I needed something ELSE to occupy my time. I was browsing today and discovered someone had pinned a photo from my blog on there...one of Scarlett's toddler bed. The toddler bed I made was featured on ohdeedoh! Make sure to scroll down past the add and read what they wrote. How cool is that? I've got sooo many other projects I want to build....I don't even know where to start.

Scarlett is doing great in school! My fears that she would be upset without me were completely unfounded. She walks right inside without even a glance back when I drop her off.

We're close to finishing the front garden project. I've been all about simplifying my life lately, and that flower garden required WAY TOO MUCH maintenance. It's a huge area, and it would take me several days to weed it. Even worse, in two weeks it would look like a jungle again. Jon got the edgers last weekend, and we had 6 tons of stone delivered today. Just a little while longer, and I don't have to weed ever again.....hooray!!! I'll post pics as soon as it's done.

Cheer Camp

Savy's school had a cheer camp Saturday morning. The elementary girls went to learn and practice cheers with the cheerleaders, and they'll perform at the pep rally Friday and at halftime at the game Friday night. Savy was very excited...here she is before she left.



I got a tip from a friend that there was a lady selling retired varsity cheer outfits at the school Saturday morning. I picked one up for Savannah to use later on...it won't be hard at all to alter it to fit her. When Scarlett saw it, she insisted on trying it on IMMEDIATELY.

We went to watch the girls demonstrate what they'd learned before camp was over. Savy was pretty tired....and definitely much less excited than she had been that morning.



Scarlett was mesmerized and kept wanting to go out to cheer with them.





Savy's still excited about the pep rally and game, but she's really more into playing sports than cheering. I imagine the thrill will wear off before long. Scarlett, however, is going to be the cheerleader type... judging by what we've seen so far.

Pet updates....Meaux is still getting spoiled rotten. He enjoys being pushed around in a doll stroller.




He's still Vita's little shadow. Vita is pretty tolerant, and she seems to like having a playmate again.

Deja Vu

It sure was quiet around the house today. I think this is the first time ever that all four of us have been in four different places...Jon at work, me at home, Savannah at Kindergarten, and Scarlett at preschool. This was Scarlett's first day of preschool, and she did great! I was worried she would cry when I left, but she seemed perfectly content to stay and play.

First Day Of School!!!!

It has been a looong day. As much as I'd like to go to bed right now, I know there will be some VERY disappointed people if I don't post about Savannah's first day of Kindergarten.

I didn't have any trouble getting Savy up this morning...she was excited and ready to go. She picked out her first day of school outfit yesterday, so getting dressed was no problem this morning. Like I said before, she already has her own personal style.



That skirt is pure BLING! The shoes are pretty blingy too...she was very sparkly today.

We ran into Savannah's friend, Maeson, in the parking lot. They were so disappointed they aren't in the same class (there are 3 Kindergarten classes), but they did get to play together at recess.





Jon and I (and of course, Scarlett) walked her in this morning. We hung around for a few minutes to make sure she was going to be ok. Once she was in the classroom with the other kids, she was fine.



She said she enjoyed her first day of school, but there were only 3 things that bothered her...

1. "It was a long day." Savy's used to preschool being only 5 hours...Kindergarten is 8-2:45.

2. "Nap time wasn't long enough." They don't really intend for them to sleep at nap time, just take a short rest.

3. "There's no afternoon snack time!" If you know Savannah, there's really nothing I need to say about this one.

Other than those 3 things, she had a great day. I wonder how long it'll be before the excitement wears off and I have to start dragging her out of bed every morning...

We Knew It Was Coming

Last night after I put Scarlett to bed, I heard her calling for me. When I went into her room, she showed me her new trick...she can put her leg over the crib rails now. Of course, this means she can climb out of the crib. So this is what we did last night...



We took the side off her crib. She was not at all happy about that, but now that she's shown us she can get over that siderail, we don't want to risk her climbing out and falling in the process. She eventually went to sleep... after many trips by me and Jon to put her BACK in bed.

Luckily, the toddler bed was ready and waiting. I disassembled the crib today and moved it out of the room. I thought she'd be upset (that girl LOVES her crib), but she was fine with it. I moved the toddler bed to where to crib used to be and put the crib mattress on it. She has brand new bedding, but she kept her green blankie.




There's much more room to play in her room now.

I have to admit I got a little sad when I was taking apart her crib. I'm not sure if it's because she's growing so fast or the fact that it's probably the last time we'll need that crib....I'm sad to see it go. It seems like just a few weeks ago that I was putting it together for her, just before she was born!

Tonight she wanted to be rocked to sleep...that's something she hasn't wanted in a while. So I rocked her to sleep and put her in her "big girl" bed, and so far she's still sleeping. It's going more smoothly than I expected. This toddler bed was the first "real" furniture I ever built. It makes me feel good to know my little girl is sleeping in a bed made especially for her by Mommy.

Water Hopscotch, Anyone?

Savannah and Scarlett begged to play water hopscotch today.



Even Meaux played ... he doesn't seem to hate getting wet like Vita does.









Savannah even tried to turn it into a slip 'n slide.



It wasn't long before Meaux joined Vita in the shade. He is Vita's shadow and follows her EVERYWHERE...see how adoringly he's looking up at her?



Vita got a haircut yesterday...actually, she got shaved. She's just been miserable in the heat lately. She looks funny without all that hair, but she's much happier now.

Here's something from my garden...



an organic cucumber for my morning juice. Bunnies (I suspect) ate every bit of my kale and collards, so I've got to figure out a way to protect the next batch.
